Fat-free, Vampire-free Cucumber Yogurt Sauce

If someone refuses to try this recipe, you can pretty much assume they are an untrustworthy vampire, and thus you should probably kill them with a stake. No seriously, kill them.

So here’s a recipe to keep all of those bloodsucking sociopaths out of your life, whilst impressing your guests during a nice summer cookout. This recipe can be used to dipping vegetables, chips, or simply pour this cucumber sauce over rice with some Indian food and call yourself a genius.

So without further ado…

one large cucumber, *half-peeled, minced
1 teaspoon dried mint
3 garlic cloves, mashed with pinch of salt (you can crush if you don’t have a masher..but get one)
1 1/2 cup fat-free yogurt* (or fat-full, whichever you prefer)
1 scallion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper



mash garlic in bowl with a pinch of salt
mix all ingredients together
chill for 1/2 hour

(my mother will occasionally add more yogurt than the recipe calls for to make a chilled cucumber, yogurt soup. also delicious!)
