Caribbean Pineapple-Avocado Salsa.

Like I said before, I like heat.

I can totally handle a little spice on my palate. Salsa should always have spice. This pineapple salsa recipe is a favorite in our house. I discovered it while Seth & I were visiting St. Croix last year, served with a Cajun grilled Halibut (yum). Whenever I do make the dish, it instantly puts me on an island, right to my happy place : )

I usually throw it in the fridge and then later toss some on my veggie burger.  You can also just eat it by itself, i won’t judge you.

So in light of our warmer weather, here is a little salsa recipe…one of many salsa recipes, i can assure you.

pine avocado

Ingredients:

1/2 small pineapple, diced
1 avocado, pitted and diced
1-2 jalapeños, diced
3 scallions, minced
2 teaspoons lime juice
1 tablespoon honey
salt & pepper to taste

Steps

1. mix all ingredients together

2. sit in fridge for 20 minutes

3. Enjoy!
